Origination: The 2020 DaYi “Lao Cha Tou” Brick is a unique creation born from the side product of manual fermentation, known as “Wo Dui,” in which pectin from tea leaves interacts with pressure and high temperature inside large piles. Originally, these chunks, known as “Lao Cha Tou,” were deemed unusable and discarded. However, over time, it was discovered that these chunks possessed a distinctive and appealing flavor profile characterized by higher sweetness and mellowness compared to general Shou Cha. Recognizing their potential, these chunks were processed and named “Lao Cha Tou,” paying homage to their origins and the artisans responsible for creating them. The lineage of “Lao Cha Tou” in the DaYi lineup dates back to 2006.
