Around 5,000 years ago in 2732 B.C. Emperor Shen Nung brewed the first cup of tea when leaves from a wild tree blew into his pot of boiling water. Since then there have been innovations in tea growing, processing, and brewing. One thing that has remained is a distinctively elegant method of making and sharing tea.
The gongfu tea ceremony (or kung fu tea ceremony) involves the ritual preparation and presentation of tea in order to experience the luxurious aroma, taste, and spirit of tea. It probably originated in Fujian and the Chaoshan area of eastern Guangdong.
The tea set necessary for the ceremony includes a teapot or covered teacup, a tea infuser, and several small cups. The tea is placed in the porcelain cup with a tea clip that resembles a wooden tweezer. Boiling water in the glass tea infuser is added to briefly wash and awaken the tea. The hot water is discarded. The tea maker inhales and shares the heavenly aroma of the warm leaves with guests. Finally, hot water is added to brew the tea. The tea is served in several small cups in order to prevent bitterness that may occur by leaving the tea a longer time in the pot. A fine quality tea may be brewed several times using this method.
