Description

- Al-Faham or Mandi is a simple but incredibly flavourful dish having origins in Yemeni cuisine.
- Meat usually lamb or chicken is marinated with a complex blend of spices and fresh yogurt or curd.
- It is then slow cooked in an oven for 2-4 hours depending upon the meat.
- The juices of the meat are then added to long grain aged basmati rice.
- The final dish is presented with the meat layered on a bed of the rice, garnished with optional dry fruits.
