Kukicha is a type of Japanese green tea that consists mostly of stems as opposed to sencha, which uses only leaves. Because of its composition of mostly stems, kukicha is higher in amino acid, bringing out more of the sweetness and less of the grassiness, and lower in caffeine, allowing you to drink it later in the afternoon without compromising your sleep. Karigane is another name used in Kyoto when referring to kukicha.
Unlike other farms that make kukicha/karigane with the left over stems from making sencha, this specific farm specialized in making kukicha. Their carefully crafted kukicha green tea has great body, sweetness, and complexity you usually can’t find in other kukicha. Although this Karigane Green Tea is mostly stems, there are also a higher ratio of tea leaves mixed in as well to give it more complexity.
Brewing Instructions:
In order to brew this tea, use a 150-180ml kyusu with 5 grams of tea leaves. This Karigane Green Tea prefers a higher temperature with a quicker brew, so use 175°F (79.4°C) water with a 15-17 second steep time for a sweet and full bodied tea.
