Description
Cattleya Wines was launched in 2012 by Colombian born Bibiana Gonzalez Rave, who trained in Bordeaux and has winemaking experience across France and California which she had decided to call home. She strives to make unique wines by focusing efforts in the vineyard to highlight the site expression in her wines. Cuvee Number Five is a standout Chardonnay sourced from 2 high elevation vineyards, Sun Chase and Nightwing. The fruit for this wine is entirely hand harvested, sorte upon arrival to the estate and then fermented in ~60% new oak barrels on native yeast, then aged in oak for 1 year in barrel as well. This wine opens with citrus blossom, peaches, and flint before moving into the tropical and richer flavor, pineapple, guava, and brioche evoke a pineapple upside down cake dotted with fresh white guava. Pair this with herb roasted chicken, crab cakes, or mushroom ravioli in a sage brown butter sauce.
