Description
Cattleya Wines was launched in 2012 by Colombian born Bibiana Gonzalez Rave, who trained in Bordeaux and has winemaking experience across France and California which she had decided to call home. She strives to make unique wines by focusing efforts in the vineyard to highlight the site expression in her wines. Cattleya Sonoma Coast Pinot Noir is the signature Pinot, sourcing fruit from primarily high elevation vineyards to bring both aromatic complexity and structure. In the cellars, native yeast fermentation, gentle handling of fruit, and French oak aging are employed all to preserve the purity of fruit, and terroir while adding structure. On the palate, this wine shows vibrant red fruits, cherry, cranberry, and pomegranate, layered with fine dried roses and fine tannins that lead to a lengthy finish and a lingering mineral tension. Pair this with salmon, either fresh or smoked, coq au vin, or a mushroom tart to highlight those delicate earthy flavors found in this wine.
