Description
A truly storied wine that must be introduced in 2 parts. Hospices de Beaune, started and still operates as a hospital caring for those who are ill and may not have the means to pay. The current structure as we know it today was built in the late 17th century, and also happens to own some rather prestigious vineyards, which they harvest, vinify, and then auction off, using the proceeds to fund their charitable services. Domaine Hubert Lignier, a family estate based in Cote de Nuits since 1880, then takes over the elevage, “raising” this wine as if it were from their own vineyards. Aging this wine for roughly 21 months, with no fining or filtering, to best allow the terroir to speak for itself. On the nose we find dark berries, black cherries and blackberries, some gentle hints of sous-boi and those lovely black tea leaves typical of NSG. Pair this with a simple musrhoom risotto topped with black truffle, or quail with blackberry sauce.
