Domaine Didier Dagueneau, now headed by his son Benjamin-Louis Dagueneau after his father’s untimely death in 2008, is revered in the Loire Valley and beyond for their genre redefining Sauvignon Blancs, showcasing what Biodynamic farming, ultra-low yields, and a meticulous hand in the cellar are capable of producing in the Loire. Clos du Calvaire is one of the rarest and most coveted cuvees from Domaine Dagueneau. It comes from a tiny walled vineyard, planted to twice the normal density of Pouilly-Fume to encourage organic vigor. Barrel fermented and aged low intervention and native yeast fermentations, the emphasis is placed on site expression here. A razor sharp palate showing precise citrus, crushed stones, and a smoky minerality typical to Pouilly-Fume. This wine is not meant to be showy in fruit, rather a display of tension and texture. Pair this with lightly seared scallops to echo that briny minerality, Roasted herbed pheasant to highlight the minerality, or perhaps even tartare.
