- Bio Basics kudampuli comes from a few homesteads of organic farmers in Thrissur District .
- These trees growing in their homesteads are traditionally harvested during the month of July .
- The fruit is then opened and dried , either in the sun or more popularly over a wood fire smoke .
- The second method is preferred due to a couple of reasons , July is the month of peak rains in Kerala and the sun is barely visible.
- Also the wood smoke dried kudampuli gets a nice texture and dark almost black colour and has a smoky flavour.
