How to brew this gongfu style:
Begin by warming your 100ml gaiwan. Quickly rinse the tea leaves with hot water at 190ºF (87ºC). For your first infusion, add approximately 3g of tea to the gaiwan and gently pour hot water along the inner walls (avoiding direct contact with the leaves). Allow it to steep for about 30 seconds. For the second infusion, steep for just 15-20 seconds. Increase the temperature to 205ºF (95ºC) for the third infusion, and steep for roughly the same 20 seconds.
