• They are then transported to the factory where the Cassia is hand cleaned, graded, and sorted.
• The spice is often confused with Ceylon Cinnamon, which is the sweeter variety.
• Cassia is commonly referred to as ‘Dalchini’ in India. In India, Cassia is a more economically priced alternative to Ceylon Cinnamon (by a factor of 3) and is characterized by a much spicier note when compared with Ceylon Cinnamon.
