Yoshihama abalone, named after the renowned Yoshihama region of Iwate, is prized for its exceptional quality and appearance. With a plump, oval body and thick skirt edges, it naturally forms a “gold ingot” shape after being strung and sun-dried, a hallmark of its traditional preparation method. Over time, dried abalone undergoes natural oxidation, developing its signature “sweet core” (tangxin) — a deepened color, concentrated aroma, and superior braising quality, delivering the ultimate gourmet experience.

- Soak dried abalone in clean water for 1–2 days (depending on size), clean thoroughly.
- Simmer in clean water for 30 minutes, then discard the water.
- Replace with fresh water and simmer for 4 hours, adding old hen, pork ribs, or Jinhua ham.
- For larger abalones, repeat simmering for another 4 hours the next day for best results.
