According to The Chinese Tea Classic, the term “Zhengshan” in Zhengshan Xiaozhong (Lapsang Souchong) signifies “truly produced in high mountain areas.” Originally, any tea produced in the Wuyi Mountains was called Zhengshan. Black tea is characterized by its mild nature and rich taste, with excellent compatibility. It can blend harmoniously with various flavors—sour like lemon, sweet like honey, strong like liquor, smooth like cheese, spicy like cinnamon, or fresh like chrysanthemum—creating delicious beverages.
Wuyi tea, formerly known by the trade name “Bohea” in English, is a category of black and oolong teas grown in the Wuyi Mountains of northern Fujian, China. Both black tea (excluding brick tea) and oolong tea were likely invented in the Wuyi region, which continues to produce both styles today. Wuyi teas are sometimes called “rock teas” (yancha) because of the distinctive terroir of the mountainsides where they are grown.
