Description
Castiel Estate Cabernet Sauvignon is a premium varietal wine from Howell Mountain, founded in 2014 by Dave and Kathleen DiCesaris. The Estate consits of an all-star team of famed viticulturist Jim Barbour and one of the icons of elite wine consultants, Celia Welch of Scarecrow wines. The fruit comes from well drained volcanic soils, and is entirely hand harvested in multiple passes, sorted optically, before being aged for approximately 20 months in 70% new oak barrels. This shows classic mountain fruit characteristics of dense dark fruits, graphite, tobacco, dried violets all framed by a firm silken tannins. Classic pairings would be grilled ribeye steak, rack of lamb, but more creative pairings would be roast pork with a dark fruit based sauce.
