Description
Domaine de Chevalier, which is ranked among those few Cru Classe of the Pessac-Leognan AOC, has been producing age- worthy wines since the 18th century, and most recently since 1983 the estate has been under the stewardship of Olivier Bernard. In fact, a special label was comissioned to honor his 40th vintage. The wine leans heavily on Cabernet Sauvingon with Merlot and other Bordeaux varietals supporting the structure. Entirely harvested by hand the fruit then is typically fermented by individual parcels in a plethora of vessels (concrete, stainless steel, French oak), before rested in oak for roughly 16 months. This wine is a true testament to the power and elegance that Bordeaux consistently delivers, opening with aromas of dark berries and smoked earth, graphite, subtle violets. The palate is a study into the layers wine can bring, fruit and polished tannin lead the charge with minerality, herbs, and vibrant acidity on the finish keep you coming back for another sip. To be paired with Roasted leg of lamb with mint sauce, or a duck served with a slightly gamey juniper berry sauce.
