During Wet Pile (accelerated aging) the Mao Cha (rough tea) harvested during the Autumn from Ancient Tea Trees in south Yunnan transforms into a rich, smooth and full flavor tea that has to be experienced to be understood.
During its month’s-long processing, the Puerh Tea pile is turned to yield the most consistency possible. Moisture however settles to the bottom of the pile collecting juices from the pile and eventually hardening into flavor packed crust that is later broken into nuggets of Puerh Tea deliciousness we call Lao Cha…Old Tea…
