Description
Calicem is the special cuvee of the Couvent des Jacobins, a historic St Emilion Grand Cru estate with a history going as far back as the 14th century. Produced from a tiny parcel of 1 hectare of old Merlot vines, it represents the domaine’s most prestigious terroir. The wine is vinified and aged entirely in barrel, with careful extended aging to bring out the riper, richer, and deeper flavors of the grapes. Concentrated dark fruits, baking spices, and a distinct minerality that truly speaks to its terroir, all wrapped in delicately silky yet structured tannins that dance on the palate. A perfect pairing for venison and pheasant.
