Domaine Didier Dagueneau, now headed by his son Benjamin-Louis Dagueneau after his father’s untimely death in 2008, is revered in the Loire Valley and beyond for their genre redefining Sauvignon Blancs, showcasing what Biodynamic farming, ultra-low yields, and a meticulous hand in the cellar are capable of producing in the Loire. Memento Mori ( Latin for “Remember you must die”, a reminder that death is inevitable and to enjoy the present moment) was first bottled in 2018 as an homage to Didier. The fruit itself is grown in minuscule amounts from very old vines, then fermented and aged in specially comissioned oak barrels designed for precision and purity of fruit. This wine is intensely layered with citrus, stone fruits, smoke, and saline minerality all giving way to a profound depth and finish. Classic pairings for this wine would be Sole meuniere or Chicken veloute with tarragon. However Didier was a man who often deviated from classic or traditional, so perhaps something like an uni pasta to echo those bright mineral notes.
